Finishes on Wood Ceiling

Has anyone a recommendation for a clear finish over stained tongue and groove wood ceiling. Its a Cathedral ceiling with new 1x6 installed over drywall. I'm worried about the heat that will be transfered from the roof, expansion and contraction of the wood and then possible peeling.
Laquer? Varnish? Shellac? What do you think?
What brands do you like?

Everybody that I know used a polyurethane. You shouldn't have to worry about peeling in the interior. You may need to put on another coat in 10 years to freshen it up. I just did this to my kitchen ceiling.
