drywall vs plaster

I had a customer ask what would justify paying the extra for a 2 coat plaster.They would like it finished smooth then sprayed with a splatter finish. What would be the best way to answer that question because the cost is significant and the customer doesn't like any of the plaster finishes (skip trowel or the swirl)but has heard plaster is the best.

The biggest advantage for two coat vice one coat plaster is the ability to make the walls truer and flatter. We often offer customers a modified plaster service, where if the framing is good we will go with the one coat finish and in places where the framing is out, we use two coat. A good place for two coat is on splayed ceilings where it almost always needs straightening. Two coat also makes a stronger wall. When you wrap your fist on it doesn't have that hollow feel. As for the finish, it is basically the same hard smooth surface for both one or two coat systems.
