Why do some drywallers just tape and spackle the joints and nails while others skim-coat the entire walls and celings? Is all the extra work skim-coating it really necessary and what is the benefit?

Skim coating the entire surface brings the finish to a level 5 finish. This level is recommended wherever paints with any shine at all are used or where severe lighting conditions occur. Check out the levels of gypsum board finishing at www.gypsum.org
